1. Klepon Singkong




Bahan :

  • 500 gram singkong (kupas lalu parut, peras airnya)
  • 50 ml santal kental 
  • 1/2 sdt garam
  • 100 gram tepung ketan
  • 3 sdm endapan daun suji / air perasan daun suji
  • Gula merah secukupnya (isian)
Pelapisnya:
  • 1 butir kelapa setengah tua 
  • 1 bks vanili bubuk
  • 1/2 sdt garam
  • 1 lembar pandan (simpulkan)
  • (Campur semua lalu kukus)
Cara Membuat :
Dalam wadah campur semua bahan lalu aduk hingga rata dan bisa di bentuk, lalu beri isian
Panaskan kukusan yg telah dialasi daun pisang/baking paper 
Kukus adonan kurang lebih  20menit, lalu gulingkan di kelapa parut yang telah dikukus


2. Pie Nanas Santan



Bahan kulit :
  • 2 sdm gula halus
  • 2 sdm susu bubuk
  • 1/4 sdt garam
  • 200 gr terigu serbaguna
  • 4 sdm maizena
  • 100 gr butter dingin
  • 4 sdm air es
  • 1 kuning telor
Cara :
  • 1. Campur rata gula susu garam terigu dan maizena. Tambahkan potongan butter campur rata dng pisau pastry sampai berbulir seperti pasir. Masukkan kutel aduk rata pakai garpu. Tambahkan air es tapi jangan semua liat kondisi adonan sampai cukup dipilin. Tekan perlahan saja dng garpu
  • 2. Bulatkan adonan. Bungkus plastik wrap. Diamkan min. 30 menit
  • 3. Cetak di loyang pie yg sudah dioles tipis margarine dan tabur terigu. Tusuk dasar pie
  • 4. Beri baking paper dan pemberat pie. Panggang disuhu 170 dc sekitar 20 menit. Lalu buka pemberat pie lanjutkan memanggan sekitar 20-25 menit / sampai matang
  • 5. Angkat. Dinginkan dan sisihkan

Bahan Vla Santan 
  • 250 ml santan
  • 50 gr gula pasir
  • 1 kuning telor
  • 25 gr tepung custard
  • 1/2 sdt vanila ekstrak
  • 1/2 sdm butter

Cara :
  •  Larutkan tepung custard dng sebagian santan setelah larut tambahkan gula dan sisa santan sambil dipanaskan
  • Setelah cukup panas, ambil sebagian santan campur dng kutel aduk rata. Tuang kembali ke larutan santan lanjutkan memasak hingga adonan meletup. Matikan api
  • Tambahkan vanila pasta dan butter aduk rata hingga mulus licin
  • Setelah cukup dingin, bisa dituang ke pie tadi. Lalu beri topping potongan cherry dan nanas

Aneka Bolu dan Cake


1. Bolu Nutrisari

   

Bahan :

  • 150 gr tepung terigu serbaguna
  • 5 butir telur 
  • 100 gram gula pasir
  •  1 sachet susu kental manis
  • 1 sachet nutrijell orange ukuran kecil
  • 1 sachet nutrisari jeruk
  • 100 gr margarin (lelehkan)
Cara membuat :

  •  Kocok telur dan gula pasir sampai berbusa, lalu masukan skm dan kocok dengan speed tertinggi pada mixer sampai putih kaku
  • Kemudian turunkan kecepatan mixer ke yang terendah , masukan nutrisari dan nutrijel ( fruit acid nya ga usah dipake) kocok asal rata saja, lalu masukan tepung terigu sedikit demi sedikit sampai tercampur rata (kocok sebentar saja), lalu matikan mixer.
  • Lalu masukan lelehan margarin kedalam adonan dengan cara aduk lipat menggunakan spatula, aduk sebentar saja sampai tercampur rata. Tuang kedalam loyang dan  panggang sampai matang.
2. Matcha Custard Cake



Bahan :

  • 3 kuning telur
  • 140 gr gula pasir
  • 1 sdm vanila ekstrak
  • 400 ml susu cair
  • 400 ml susu cair
  • 100 gr butter/ margarin, lelehkan
  • 80 gr terigu + 1 sdm matcha (ayak)
  • 3 putih telur

Cara membuat :

  • Campur dan aduk kuning telur dan gula, tambahkan margarin, masukan vanilla, tambahkan terigu + matcha, aduk, masukan susu cair, bertahap. Sisihkan.
  • Kocok putih telur hingga kaku. Masukan putih telur ke dalam adonan terigu, aduk sampai rata
  • Tuang ke dalam loyang, dioles margarin. Panggang selama 40-50 menit di suhu 140'C. Keluarkan dari oven biarkan selama 10 menit. Keluarkan dari loyang.

3. Bolu Tape Keju



Bahan :

  • 300 gram tape singkong
  • 5 butir telur
  • 75 ml susu kental manis
  • 180 gram terigu protein 
  • 1 sdt baking powder
  • 1 sdt cake emulsifier
  • 180 gram gula pasir 
  • 1/2 sdt essence vanilla
  • 150 gram margarin, lelehkan
  • 50 gram keju cheddar parut
Taburan:
  • 50 gram keju cheddar parut (sesuai selera)

Cara membuat :

  • Siapkan loyang tulban diameter 22 cm, olesi margarin dan taburi tipis dengan terigu
  • Ayak terigu dan baking powder, sisihkan
  • Panaskan oven 150°C-160°C, jangan besar2 suhunya karena manggangnya cukup lama. Nanti kalo pake api besar cepat gosong sementara dalemnya belum mateng.
  • Haluskan tape singkong dengan garpu/pastry blender, campur dengan susu kental manis
  • Kocok telur, gula pasir dan cake emulsifier sampai kental sekali. Tambahkan essence vanilla, kocok rata sebentar.
  • Masukkan campuran tape singkong sedikit demi sedikit sambil dikocok perlahan dengan mixer kecepatan rendah hingga merata.
  • Masukkan margarin cair sedikit demi sedikit sambil diaduk perlahan dengan spatula.
  • Masukkan campuran terigu sedikit demi sedikit sambil diaduk rata dengan spatula. Masukkan keju cheddar parut. Aduk rata.
  • Tuang ke dalam loyang, taburi keju parut. Panggang dalam oven selama 40-50 menit sampai kecoklatan dan matang
  • Angkat, biarkan sebentar dalam loyang. Lalu keluarkan

Risoles Rogout Ayam dan Pancake Mangga



1. Risoles Rogout Ayam


Bahan :
Kulit
  •  250 gram tepung terigu
  •  25 gram gula pasir
  •  2 kuning telur
  •  1/2 sdt garam
  •  250 ml air
  •  250 ml  susu cair
  • 25 gram mentega (cair kan dan dinginkan)
Isi Risoles
  • 2 sdm mentega 
  • 3 siung bawang putih cincang
  • 3 butir bawang merah iris tipis
  • 200 gram daging ayam ( potong dadu dan rebus )
  • 100 gram wortel  ( potong dadu dan rebus )
  • 100 gram kentang ( potong dadu dan rebus )
  • 2 batang seledri cincang
  • 1 sachet susu kental manis
  • 100 gram tepung terigu
  • 600 ml susu cair
  • garam, gula & merica bubuk 
Cara Membuat:
 Kulit

  • Aduk semua bahan jadi satu, aduk hingga tercampur rata, saring. Olesi permukaan teflon dengan minyak, ratakan dengan tissue, dadar satu persatu dengan api kecil sampai selesai, sisihkan.
Isi Risoles
  •  Cairkan mentega, tumis bawang putih & bawang merah hingga harum , masukkan semua bahan lain (kecuali tepung terigu & susu), bumbui garam, gula & merica bubuk, aduk rata.
  •  Larutkan tepung terigu dengan susu cair, tuang kedalam bahan yang dimasak tadi, aduk rata, masak hingga matang dan mengental, angkat.
  • Ambil selembar kulit, beri 1 sdm rogout , bungkus bentuk segi panjang atau segitiga sesuai selera, celupkan kedalam putih telur, lalu gulingkan ke atas tepung roti, lakukan sampai habis.
  • Goreng dengan minyak panas dengan api kecil sampai berwarna kekuningan. Menggoreng dalam jumlah sedikit saja & harus dibilang-balik supaya kuning merata. Angkat, sajikan.

2. Pancake Mangga


Bahan :
Kulit


  • 150 gram tepung cakra
  • 300ml susu cair dingin
  • 2 butir kuning telur (ukuran kecil )
  • 2 sdm butter cairkan
  • 2 sdm gula halus
  • 1/4 sdt garam
  • 2 tetes perasa mangga
  • 2 tetes perasa strawberry
  • 2 tetes pasta pandan

Isi Pancake Mangga

  • 100 gram  whippy cream bubuk
  • 200 ml air es
  • 1 sachet susu kental manis
  • buah mangga potong secukupnya
Cara Membuat:

  • Bahan isi mixer kecepatan tinggi bubuk whippy cream, air es, susu kental manis diamkan di kulkas
  • Campur tepung, gula halus dan garam ayak rata, sisihkan
  • Campur kuning telur, susu dingin, aduk dengan balon whisker, sampai lembut, tuang campuran tepung aduk sampai rata dan tidak bergerindil
  • Tuang butter cair aduk rata, saring jadi 3 bagian, tuang perasa
  • Panaskan wajan teflon tuang 1sdk sayur ke wajan, putar sampai rata dan tipis, tunggu beberapa menit, angkat sisihkan ( wajan tdk usah dikasih minyak ya)
  • Setelah kulit pancake dingin beri isian lipat seperti  amplop simpan di kulkas
